One Skillet Chicken & Vegetables

I have made this dish so many different ways. Some times I call it a Stir Fry. I have used chicken, beef, pork & even shrimp. But the vegetables are mostly the same each time. Am always trying new ways to get my family to eat more vegetables. This is another family favorite

extra virgin olive oil
1 medium
onion, julienned
4 medium
carrots, sliced diagonal
1 medium
new red potatoe, 1/2 slices
4 clove
button mushroom, halved
1 lb
broccoli crowns, bite size
3 clove
garlic, sliced
chicken thighs, boneless skinless & cut into strips
1 Tbsp
fresh herbs, basil, oregano & thyme chopped
3/4 c
chicken broth
1/2 tsp
salt & pepper mix


1heat large skillet over medium heat & add in a drizzle of EVOO. Saute the onion until almost translucent. The add in the carrots & potato. Stir occasionally until potatoes start to turn brown.
2Add in the mushrooms broccoli & garlic. Cook until broccoli is just turning color & still is crisp. Remove vegetables from pan & set aside.
3Add the chicken to the pan & cook until brown. Pour in the chicken broth & simmer until chicken is fully cooked. Stir in the veggies.
4Add in the herbs & seasonings. taste to check & adjust the taste as needed.
