Crunchy Chicken Salad

This salad was served at a friend's baby shower and it was a hit. I have served it on lettuce cups, baby croissants and with assorted crackers. Prep time does not include time for cooking chicken.

cooked chicken breast, cubed
eggs (boiled and chopped)
1 c
celery, chopped
1 c
sweet pickle, cubed
1 c
pecans, toasted and chopped
1 c
green seedless grapes, halved (or red if you prefer)
1 c
mayonnaise (can use light)
1 can(s)
water chestnuts, (8 oz can drained and chopped)
1 can(s)
pineapple tidbits (8 oz can - drained and chopped)
1/2 c
pimento-stuffed olives, chopped
1 small
onion, chopped (red or can use green onions)
1 jar(s)
pimento, drained and chopped (2 oz. jar)
1 Tbsp
fresh lemon juice

Directions Step-By-Step

Combine all ingredients in a large bowl and chill.
Serve on lettuce cups or use for sandwiches.
