This salad was served at a friend's baby shower and it was a hit. I have served it on lettuce cups, baby croissants and with assorted crackers. Prep time does not include time for cooking chicken.

Ingredients For crunchy chicken salad

5 1/2 ccooked chicken breast, cubed

3eggs (boiled and chopped)

1 ccelery, chopped

1 csweet pickle, cubed

1 cpecans, toasted and chopped

1 cgreen seedless grapes, halved (or red if you prefer)

1 cmayonnaise (can use light)

1 canwater chestnuts, (8 oz can drained and chopped)

1 canpineapple tidbits (8 oz can - drained and chopped)

1/2 cpimento-stuffed olives, chopped
-
1 smonion, chopped (red or can use green onions)
-
1 jarpimento, drained and chopped (2 oz. jar)

1 Tbspfresh lemon juice
How To Make crunchy chicken salad

1Combine all ingredients in a large bowl and chill.
