Ingredients

4 slice
bacon, chopped
4
boneless, skinless chicken breasts
salt and pepper to taste
1/4 c
flour
1 c
sliced onions
1/2 c
chicken broth
1 c
apple cider
1/2 c
heavy cream
1
red apple, sliced
1 Tbsp
chopped thyme, fresh

Step-By-Step

1In skillet, cook bacon bits until crisp, drain on paper towels. reserve bacon fat. Season chicken w/ salt and pepper.
2Dredge chicken in flour in shallow bowl. Cook chicken in bacon fat over medium heat, for 6 min per side. Remove chicken from pan and keep warm.
3Add onions to skillet, cook 5 mins. Add broth and simmer until slightly reduced. Add cider and simmer 5 mins, stirring often. Add apple, thyme and bacon bits. Stir in heavy cream. Add chicken and simmer 5 mins.
