I make a big pot of this and share with neighbors. This is a low carb meal. This is great for anyone on the Atkins Diet.

Ingredients

2 lb
lean ground beef
1 Tbsp
extra virgin olive oil
1 large
onion, chopped
1 clove
garlic, minced
1 small
cabbage head, chopped
2 can(s)
low sodium diced tomatoes (14.5 oz)
1 can(s)
8 oz tomato sauce
1/2 c
water
1 tsp
fresh ground pepper
1 tsp
sea salt
1 tsp
italian seasoning

Step-By-Step

1In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
2Add the garlic and Italian Seasoning and continue cooking for 1 minute.
3Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt and bring to a boil.
4Cover and simmer for 20 to 30 minutes, or until cabbage is tender.
5Serves 6 to 8.
