- 3/8 - 1/2 slice
- eggplant, skin off; soak in salt water 1/2 hr or so
- egg beaten with dash salt
- parmigiano-reggiano, grated
- mozzarella cheese
- marinara sauce
1Oven 350 - 400.
2Drain eggplant and dry on paper towels; dip each slice in egg; saute or fry in oil on med heat, until lightly browned.
39x13" baking dish layer (flat) Sauce, cheeses, eggplant, ending with sauce and cheeses. Grate Mozzarella cheese over all.
Bake until cheese melts.
