My little Italian co-worker Lived at home with her 60 yr old mom from Italy and this is her recipe; via the phone. I needed to make dinner that nite,she came to the rescue!!

Ingredients

3/8 - 1/2 slice
eggplant, skin off; soak in salt water 1/2 hr or so
egg beaten with dash salt
parmigiano-reggiano, grated
mozzarella cheese
marinara sauce

Step-By-Step

1Oven 350 - 400.

2Drain eggplant and dry on paper towels; dip each slice in egg; saute or fry in oil on med heat, until lightly browned.

39x13" baking dish layer (flat) Sauce, cheeses, eggplant, ending with sauce and cheeses. Grate Mozzarella cheese over all.
Bake until cheese melts.

4This was written on a piece of memo paper as my friend got it from her mom in broken English. We love this dish! Hope you do too :)
