Ingredients

2 slc baguette
4 Tbsp boursin cheese
1/4 c red grapes (seedless), sliced in half
4 Tbsp diced tomato
2 Tbsp diced red onion
2 Tbsp diced cucumber
1 Tbsp diced red pepper
1/4 tsp salt
1/4 tsp pepper
1/8 tsp garlic
1 tsp olive oil
dash of dried parsley flakes

Monica's Notes:
The combined taste of grapes and boursin is divine. I purposely left out the basil in this bruschetta because I did not want to overpower the flavor of the cheese.

Directions

Spread 2 tbs boursin cheese on each baguette slice. Toast in toaster oven for 3-4 minutes, until bread is crispy on sides.

In the meantime, mix the rest of the ingredients (except grapes and parsley) in bowl.

Top bread with the grapes, arranging them to cover the entire slice.

Spoon the mixture over the top, sprinkle with parsley and enjoy!
