Ingredients

1
4 to 5 pound duck
kosher salt to taste
dried thyme
1 small
yellow onions, stuck with 2 cloves garlic
1 Tbsp
crushed black peppercorns

Directions Step-By-Step

rub the duck skin with kosher salt and thyme. Place the duck on a rack in a shallow roasting pan. roast in a preheated oven at 350 degrees f for 30 minutes. prick the skin with a meat fork all over to release the fat, roast for another 30 minutes longer. Remove the duck from the oven and press the peppercorns into the skin, Return it to the oven and roast for 30 minutes longer. let the duck stand 10 min. serve, cut in halves or quarters with poultry shears.
