Sauteed Salmon with lettuce and olives

4 oz
salmon fillet
1/4 c
olives - sliced
1/4 c
lettuce leaves - or spinach - ribboned
1 dash(es)
salt and pepper, seasoning to taste
1 Tbsp
lemon or lime juice
1 tsp
fresh garlic
1/4 tsp
fresh basil - ribboned
2 Tbsp
olive oil, extra virgin


1Saute garlic in olive oil, add olives, basil and lettuce and cook until lettuce starts to wilt.
2Add salmon and cook until no longer pink in the middle. Add lemon juice and seasoning to taste.
3Serve with wild rice pilaf as a side.
