Sometimes I'll add a pat of butter on the fish as soon as it come out of the oven.

- 2 t. olive oil
- 2 t. butter
- 2-3 lb salmon fillet
- 4 t fresh parsley,dill,green onion and cilantro,minced
- 2 t. red onion or shallot,minced
- salt and pepper to taste
- fresh lemon juice
Sprinkle salmon with salt and pepper.Sprinkle chopped herbs and shallot on the hot oiled baking sheet.
Place salmon flesh side down (skin side up) over the herb mixture and roast for about 5 minutes.
Flip the salmon over and roast for another 5 minutes.
Just before serving,squeeze lemon juice all over the salmon and add additional salt and pepper.
