Ingredients

LYNN'S TARTER SAUCE
1 c light miracle whip
1 Tbsp plus 1 tsp. of ketsup
2 Tbsp sweet pickle relish
1/2 tsp lemon juice
1/2 tsp black pepper
FISH TACO'S
8-16 fish fillets, depending on size
8 flour tortillas
2 cucmbers, cut into sticks
2-4 Tbsp flour
chopped lettuce

Lynn's Notes:

This is for the Sammie Challenge using FISH and CUCUMBERS.

Two ways to make this:
HEALTHIER VERSION: baked fish fillets and raw cucumber sticks.
TASTIER VERSION: breaded, fried fish, and fried cucumbers.
Either way makes a delicious, refreshing meal.

 

Directions

Use your favorite fried fish recipe, or buy frozen battered fish and cook per package directions.

Cut cucumber in half across.

Use a mandolin and cut into "stick".

Toss sticks with a little flour to absorb the moisture. Deep fry for a couple of minutes. Remove to bakers rack and salt and pepper.

Mix 1 c. of miracle whip with 1 tablespoon each of ketchup and sweet relish and 1/2 tsp. of lemon juice.

Shred or chop lettuce, set aside.

Use a griddle or in a skillet sprayed with non stick spray oil. Heat till real hot (400°). Place tortilla on one side, heat till browned, fold in half with browned side inside, heat each half side of tortilla till browned.

Place lettuce, fish and cucumber stings in flour tortilla. Drizzle with tarter sauce and lemon juice.

I was surprised, I have never eaten one before, but they were really, really good!I wish I'd made a fresh slaw with the cucumber, but when in doubt, I fry! lol

Yeah, my nephew makes a great slaw to put on his fish tacos and they are wonderful. These sound heavenly also, though. I love cucumbers too.

I love the smell of cucumbers, lol, they smell like watermelon to me, yum!!! I'm not a huge fan of them, but fried they are tasty, but what isn't!!

I don't fry foods much, but for these challenges, seems like I'm always frying something cause I don't know what else to do with it, lol. I once fried some asparagus tips cause I didn't know what else to do, lol. View photo
