Lynn's StoryThis is for the Sammie Challenge using FISH and CUCUMBERS.
Two ways to make this:
HEALTHIER VERSION: baked fish fillets and raw cucumber sticks.
TASTIER VERSION: breaded, fried fish, and fried cucumbers.
Either way makes a delicious, refreshing meal.
LYNN'S TARTER SAUCE
light miracle whip
plus 1 tsp. of ketsup
sweet pickle relish
fish fillets, depending on size
cucmbers, cut into sticks
4Toss sticks with a little flour to absorb the moisture. Deep fry for a couple of minutes. Remove to bakers rack and salt and pepper.
5Mix 1 c. of miracle whip with 1 tablespoon each of ketchup and sweet relish and 1/2 tsp. of lemon juice.
6Shred or chop lettuce, set aside.
Use a griddle or in a skillet sprayed with non stick spray oil. Heat till real hot (400°). Place tortilla on one side, heat till browned, fold in half with browned side inside, heat each half side of tortilla till browned.
