3/4 c beer, open and flat no carbs.
2 tsp vegetable oil
1 1/4 c aunt jemima pancake mix ,original
1/4 tsp white pepper
1/8 tsp baking soda
1/3 c water

Combine egg white,beer,1/3 cup water and 2 teaspoons oil.add dry ingredients and whisk until smooth.Heat oil in fryer i use electric skillet to 375 degrees.pat fish fillets dry;if the batter wont adhere dust with flour first. Fry 3-5 mins,depending on thickness of fillets,or until golden brown.Fish with no bones will float when done

T batter was used in a restaurant that has closed. i love it on a fish called SWAI i find it at walmart.Not a strong fish flavor white in color from the catfish family.
