From the Civil War Cookbook with my addishions..May use any firm fish.

Ingredients

1/2 lb
bacon, cooked
2 large
onion,chopped

celery stalks

carrots, chopped
2 lb
catfish filets,cut into large chunks
1 Tbsp
chopped parsley and thyme
1 c
white wine, medium
3 large
eggs
2 Tbsp
butter
3 Tbsp
flour
1 c
half and half
2 medium
potatoes,peeled and diced.

Directions Step-By-Step

In a large dutch oven fry bacon till chrisp.Remove and reserve.. Now add onoin selery,acrrots,and potatoes.cook till soft...
Now add fish salt and pepper to taste. Parsley and thyme. Cover with wine,and simmer till fish is tender buy not breaking up..

In a bowl mix eggs,butter,half-half and flour.mix and cook over med heat. once heated add to soupalong with bacon...

Heat soup gently till thickened. Note you may have to adjust seasoning. Serve with tosted bread...
