sallye bates

This is a go-to recipe for when you are either (1) rushed for time, (2) not really wanting to cook, or (3) needing a recipe to please kids. It fits all these criteria; at least my kids and grandkids have loved them through the years.

1 large
egg, slightly beaten
2 c
corn meal
2/3 c
all purpose flour
1 Tbsp
baking powder
1 tsp

sale & pepper to taste

1Turn can of salmon out into bowl, juice included.

Pick out obvious bones (although if you leave them in it doesn't hurt)

Break up into chunks

Add salt, pepper and garlic powder
2Add lightly beaten egg and mix well with salmon
3Add meal, flour and baking powder

Mix well until the result is a stiff dough-like batter (Add more meal if necessary)
4In heavy skillet, pour enough cooking oil to cover the bottom of pan about 1/2" deep

Heat oil on medium high heat until it begins to barely smoke
5Hand form salmon mixture into 6 patties and place in hot oil

Cook each side until brown and crispy (about 5-6 minutes per side)
6Drain on paper towel and serve while still hot.
