Almond Crusted Tilapia for Two

My husband and I are trying to eat healthier and fresh foods are at the top of our list. I have never been much of a seafood fan, but this is so good I want to make it again soon! I just tweaked this recipe last night and this portion is perfect for just two people. Multiply this by the number of people and I am sure it will be a hit!

I served it with mashed sour cream and green onion potatoes, and a side of asparagus and tomatoes

I followed Katrina's recipe exactly and it was perfect. A great recipe for two people. I was concerned there wouldn't be enough flavor since all the seasoning was in the egg mixture, but boy was I wrong. The slight crust the almond and cheese give is great on the tender fish. Quick, easy and super good!

Ingredients

tilapia fillets
1
egg
1/4 tsp
garlic powder
1/4 tsp
lemon pepper
1/4 tsp
parsley flakes
1 Tbsp
flour
1/4 c
grated Parmesan cheese
1/4 c
almonds, finely chopped
1-1/2 Tbsp
butter

lemon wedges

Directions Step-By-Step

In a shallow dish beat egg and add spices, then set aside.

In a second shallow dish mix finely chopped almonds with Parmesan cheese and set aside.

Lightly dust each filet with flour on both sides.

Melt butter in a non-stick skillet over medium high heat.

Dip floured fillets into egg mixture then into almonds and cheese mixture. Press down to collect as much coating as possible on both sides of each piece.

When skillet is hot, saute the fillets turning only once till golden brown (approximately 2-1/2 minutes per side). Serve with lemon wedge garnish.
