Veggie Stuffed Chicken

Ingredients
| 6 lg | boneless, skinless chicken breasts, pounded to 1/4 inch thickness |
| 1/2 | yellow onion, chopped |
| 2 lg | celery stalks, chopped |
| 4 oz | mushrooms, chopped |
| 1/4 sm | package shredded carrots, chopped |
| 1 c | broccoli, chopped |
| 16 oz | package of frozen spinach, thawed, drained and squeezed dry |
| 8 clove | garlic, minced |
| 1 tsp | black pepper |
| 1 tsp | salt |
| 1 Tbsp | dried basil |
| 1 Tbsp | dried parsley |
| 2 tsp | dried oregano |
| 1/2 c | parmesan cheese, grated or shredded |
| 8 oz | feta cheese, crumbled |
| 2 | pieces of bread, toasted and crumbled (or croutons, crushed) |

Several years ago, I wanted to make some sort of stuffed chicken, but didn't know what. I had a frig full of veggies, so this is what I ended up with. It was amazingly good. I took it to a family gathering and everyone raved about it. I hope you try it and enjoy it too!

Directions
Mix everything together. Spread veggie mixture down the center of each flattened chicken breast and roll up tightly. Secure with toothpicks as needed. Place in baking dish seam side down.
Bake at 350, covered with foil, until chicken is nearly done (about 30-45 min.), then remove foil and finish cooking (another 15 min.).
