Veggie Stuffed Chicken

Several years ago, I wanted to make some sort of stuffed chicken, but didn't know what. I had a frig full of veggies, so this is what I ended up with. It was amazingly good. I took it to a family gathering and everyone raved about it. I hope you try it and enjoy it too!

Ingredients

6 large
boneless, skinless chicken breasts, pounded to 1/4 inch thickness
1/2
yellow onion, chopped
2 large
celery stalks, chopped
4 oz
mushrooms, chopped
1/4 small
package shredded carrots, chopped
1 c
broccoli, chopped
16 oz
package of frozen spinach, thawed, drained and squeezed dry
8 clove
garlic, minced
1 tsp
black pepper
1 tsp
salt
1 Tbsp
dried basil
1 Tbsp
dried parsley
2 tsp
dried oregano
1/2 c
parmesan cheese, grated or shredded
8 oz
feta cheese, crumbled
2
pieces of bread, toasted and crumbled (or croutons, crushed)

Step-By-Step

1Mix everything together. Spread veggie mixture down the center of each flattened chicken breast and roll up tightly. Secure with toothpicks as needed. Place in baking dish seam side down.

2Bake at 350, covered with foil, until chicken is nearly done (about 30-45 min.), then remove foil and finish cooking (another 15 min.).
