Sausage sandwiches with grilled onions, peppers and sauce are a favorite in many parts of the country, so I decided to make a version I would really enjoy with Chicken, feta and spinach sausage which is so delicious and full of flavor. The sauce I added to this sandwich is super easy and has addt'l crunch of sauteed carrots in marsala wine. Carrots are added to several different types of Italian sauces so this one is just kicked up a little with more carrots. Add the onions, cheese and olives and you have one mouth watering husband named it, The Italian Buster. LOL

1/2 c
black olives, sliced
1/2 c
mozzarella cheese, shredded

small pizza sauce
1 - 2 tsp
italian seasoning
6 medium
carrots, julienned
1/2 medium
onions, sliced
1/4 c
marsala wine
2 Tbsp
4 medium
chicken feta spinach sausage or your favorite sausage
sausage/hoagie rolls

Directions Step-By-Step

This is what raw chicken, feta spinach sausage looks like.
I buy mine at a local butcher shop but here are a few companies that make it too. Maybe your grocery store carries one of these name brands.

Grill your sausage.
Saute your slice onions in some butter and once they are done set them aside. While they are sauteing in pan julienne your carrots. Next saute the carrots in some butter and the marsala wine until somewhat tender. When carrots are finished add to your pizza sauce.
Heat your pizza sauce in a pan and add add'tl Italiane seasoning or your favorite seasoning. Once heated add the sauteed carrots.
Toast the sandwich buns first in the oven and then add your sausage, some sauce, grilled onions, mozzarella and slice olives on top and place back in oven till cheese is melted about 4 to 5 minutes.
