Ingredients

8 oz cream cheese
2/3 c sour cream
1/4 c hot sauce
3/4 - 1 pkg ranch dressing dry mix
2 chicken breasts
1/2 - 1 c vegetable stock
1 c grated sharp cheddar
3 scallions

Monica's Notes:
This recipe is adapted from a bunch of recipes I have seen. I've taken a little from each recipe, and added some of my own touches, too. This has ended up being probably the best buffalo chicken dip I have ever tasted! Yum!
 
 

Directions

Soften cream cheese to room temp. In the meantime, boil chicken breasts until done.

When chicken breasts are cooked, shred them with a fork.

Using a mixer, blend together the cream cheese, sour cream, hot sauce and 3/4 of the ranch. Add chicken and mix together.

Add chicken mix to crockpot (you'll have to use a spatula to get it all out of your mixing bowl). Add 1/2 cup stock, mix together well, cover and cook on low to med-low for 1 hour.

Stir occasionally. If consistency is not to your liking, add more stock. Taste. If need more flavor, add rest of the ranch.

After 1 hour, mix in the grated cheese. Cover and cook on low for another hour or two, until cheese has fully melted.

Before serving, top with chopped scallions. Enjoy!

Thanks, Melissa! It definitely is yummy! It is not going to make it to the party tonight because it is almost gone... I used to make buffalo chix dip using vinegar and pepper, and I never really "loved" it. So I went back to looking at a bunch of different methods and ingredients, and I came up with this and it is SERIOUSLY good...!

Thanks, fabulous ladies! Lakija, I had it with some Townhouse crackers and that tasted very good. Prior, I have served this kind of dip with pita chips, carrots and celery, Ritz crackers, and also with a bowl of just torn up bread (I like it with torn up bread the best)! Hope you like it!
