Ingredients

1-1/2 lb
chicken breasts, boneless and skinless-cut into bite sized pieces
1 Tbsp
sesame oil

onion-chopped
2 Tbsp
soy sauce

celery stalks,chopped
2 large
carrots,diced
1 c
frozen peas
6 c
cooked white rice
1/2 c
soy sauce
2 large
eggs
1/2 c
cashews, unsalted

Directions Step-By-Step

Heat oil in a large skillet over medium heat. Add onion and saute until soft, then add chicken and 2 tablespoons soy sauce and stir-fry for 5 to 6 minutes or until chicken is no longer pink.

Stir in carrots, celery,peas and cashews for another 5 min.Then add rice nd stir thoroughly. Finally, stir in raw,scrambled eggs and 1/3 cup soy sauce. Heat through and serve hot.
