Sweet and Sour Chicken

This dish comes in handy when you're pressed for time. It can be paired with a green salad (Chinese style tastes great) and fortune cookies for dessert for a tasty light meal.

boneless, cubed chicken breasts
1/2 c
green pepper strips
1/2 c
red pepper strips
1 Tbsp
1/4 c
low-salt soy sauce
1-8-oz can(s)
chunk pineapple in juice
3 Tbsp
white vinegar
3 Tbsp
light brown sugar
1/2 tsp
ground ginger
1/2 tsp
garlic powder
brown rice, cooked

Directions Step-By-Step

Cook and stir chicken in 1 tb. hot olive oil in a large skillet until well browned. Add peppers; cook and stir 1-2 minutes. MIx cornstarch and soy sauce. Add to pan with pineapple and juice, vinegar, sugar and spices. Bring to a full boil. Sere over rice.
