Ingredients

1-3 dozen
bone in skin on chicken wings
Water
water to cover
2 bottle
apple ale
1/2 c
smoke salt
1/2 c
brown sugar
1 each dash(es)
garlic powder, onion powder,
3 Heavy dash(es)
black pepper
1 c
hot sauce

DRY RUB

1-2 c
your favorite dry rub or poultry seasoning, i personally use honey pecan rub and mccormic's apple rub

Step-By-Step

1Combine all but dry rub and let soak for at least 2 hours, over night is better

2Take chicken wings out and while still wet rub with whatever dry rub your gonna use

3Place in single layer in basket (I use a veggy grill basket) and put into preheated smoker between 225-250'ish for 3 hours. Do not open smoker, if your lookin, you ain't cookin! I personally prefer pecan wood with maybe one stick of oak.

4Take out and dress with your favorite BBQ sauce or wing sauce, or just have dry! Enjoy!!
