Roasted marmalade chicken

I try to make roasted chicken at least once a week. It's cheaper, because you almost always have left-overs you can use for other recipes.

I like the mild orangy taste to this chicken. And it's VERY moist.

orange juice
1 tsp
orange zest, or peel
3 Tbsp
chicken broth
3 Tbsp
orange marmalade
5 tsp
minced garlic
celery stalks, chopped.
1 large
red onion, cut into wedges.
1 lb
small red potatoes, halved.
8 oz
baby carrots.
1 tsp
dried thyme
1 tsp
dried rosemary
2 Tbsp
olive oil.
6 lb roasting chicken

Directions Step-By-Step

Heat oven to 350. In bowl, combine orange juice, orange peel, broth and marmalade, season w/ salt and pepper. In lg roasting pan, toss next 7 ingredients w/ oil Place chicen over veggies. Coat chicken w/ marmalade glaze. Roast chicken and veggies about 2 hrs, or until no longer pink inside.
