This is a fool proof go to recipe,always comes out perfectly.
They say the measure of a good cook, is roasting a chicken, and making a perfect omelet.
Well, one out of two ain't bad.

Ingredients

3-4 lb
roasting chicken
1
lemon
6 clove
roasted, or 3 cloves crushed
1/2
onion
2 tsp
onion,and garlic powder
2 tsp
paprika
2 Tbsp
olive oil

Directions Step-By-Step

Remove giblets, from chicken and pat dry.
Slip your fingers under skin on breasts,and make a pocket.

Cut lemon into 4 thin slices,slip 2 under each skin of breast, along with 3 roasted garlic cloves,or scant minced.
Rub olive oil over chicken, sprinkle,garlic powder, and onion powder,paprika,salt,pepper.
Stuff 1/2 onion, and 1/2 the lemon in cavity.

Tie legs together with kitchen twine.

Bake on rack,in a preheated oven 425,uncovered.
1hour 30 min.
Remove from oven, let rest 10-15 min. lightly tented with foil.
