Ingredients

4 boneless, skinless chickenbreasts, cut into strips
1 14-1/2 oz can low-sodium diced tomatoes
1 c chili sauce
1 large green bell pepper, chopped
1/2 c celery, chopped
1/4 c onion, chopped
2 tsp minced garlic
1 tsp dried basil
1 tsp dried parsley
1 tsp crushed red pepper
1/2 tsp cajun seasoning

This is a healthy version of chicken creole that just happens to be delicious.

Directions

Spray a lg skillet w/ cooking spray, place over high heat. Add chicken and cook 3-5 mins per side.

Add tomatoes w/ juice, chili sauce, green bell pepper, celery, onion, garlic, basil, parsley, red pepper and cajun seasoning.

Bring to a boil. Reduce heat and simmer, covered for 10 mins.
