Pecan Crusted Chicken
Then my son and I made this for him to take to work. Now we make it abought once a month.

- 6 large
- checken breast,bone in.
- 1 1/2 c
- pecans,chopped fine.
- 2/3 c
- bread crumbs, seasoned
- 1 tsp
- each thyme,rosemary,oregano,paprika,and cayenne
- 1/2 c
- olive oil, light
1you will need a 14" cast iron dutch oven with a meat trivet. Or some thing to keep meat of the bottom.I usw a meat trivet so as not to let bottom of chixke cook to fast.
Rub chicken breast with olive oil so pecan mix will stick to the meat.
2mix pecans,bread crumbs and spices together...Spray the inside of the dutch oven with cooking spray.
dreadge each chicken breast in pecan mix. Lay in the dutch oven and put cover on cook over med-high heat for 45-60 min. Chicken will cook fast,.cook till jucis run clear. Should have a light brown color to the coating...I serve this with dirty rice
3If cooking in the oven.bake at 400 for 15 min.the reduce heat to 350 and cook 20 min more.
