A very healthy way to have fried chicken! I grated fresh parmigiano cheese, excellent!

Ingredients

boneless, skinless chicken breasts
olive oil
1 c
panko bread crumbs
1 c
grated parmigiano reggiano
2 Tbsp
dried basil
salt & pepper

Directions Step-By-Step

Trim fat from chicken breasts.
Pound chicken breasts to about 1/4 inch thick.

Heat olive oil in skillet or electric fry skillet, enough to fry chicken (just enough to coat bottom of pan).

In medium bowl, add panko crumbs, Parmigiano, basil and season with salt and pepper to taste. Press chicken into mixture and coat on both sides, shaking off excess.

Place chicken into frying pan and cook about 8 minutes each side or until cooked through.
