This turns out a very pretty dish and is great for company. Looks like you spent all day cooking but is relatively quick and easy to prepare! Picture is not mine.

Ingredients For orange glazed chicken with wild rice and pecans

16 ounce package of long grain and wild rice mix

chicken broth, as needed to cook rice mix

1cut up whole chicken or just use your favorite chicken pieces

3 Tbspplus 1 additional tablespoon of butter

several pinchof salt and pepper, as needed to season chicken

1/2 corange marmalade

1/4 cfrozen, concentrated orange juice

1 tspcornstarch

1/2 cchopped pecan pieces
How To Make orange glazed chicken with wild rice and pecans

1Cook rice according to package directions, using chicken broth instead of water.

2While rice is cooking, preheat oven to 350 degrees F. Place chicken pieces on baking pan. Baste with 3 tablespoons of butter, and season with salt and pepper. Bake chicken for 25 to 30 minutes.

3In a saucepan combine 1 tablespoon of butter, marmalade, and orange juice. Bring to a boil. Dissolve cornstarch in small amount of water. Slowly stir in enough of cornstarch mixture to thicken the butter/orange mixture. Add the pecans.

4Place the cooked rice in a 9 X 13 inch casserole dish. Arrange the baked chicken on top of the rice. Pour the orange glaze over the chicken. Return to oven, and cook for 12-15 minutes, or until glaze begins to brown.
