|1 Tbsp||lemon juice|
|1/8 tsp||ground chipotle pepper|
|SUGGESTED SALAD BOWL ITEMS:|
|cut-up lettuce, red onion 1/4" slices/quartered, zucchini or yellow squash - thinly sliced, fresh nectarine - bite size pieces, avocado cubes, bite size cooked chicken or grilled steak/thinly sliced 1/4-1/8" thick|
Husband "Loves Strawberries" - always bringing them home. Had about a cup of leftover ones cut-up w/sugar, it was a 98 degree day and felt like having a salad, instead of cooking a big hot meal that day. Having some leftover grilled steak, my mind kicked into gear and used those berries to make a dressing for a salad. Thought my husband was going to loose his mind over how delicious it turned out .... "two" days later he requested that I put it together again, only used chicken that time.
In "two" individual bowls or "one" medium-large bowl, place cut-up lettuce ... followed by the onions, squash slices, avocado, nectarines and either chicken or steak slices ... ladle the Fresh Strawberry Dressing over the salad bowl fixings ... and serve.
