Mini Chicken Salad Croissants

A Taste of Home recipe, tried and true. These are great. I had to give the recipe to many people after serving these at a luncheon.

Serves:

20 sandwiches

Ingredients

1/3 c
sour cream
1/3 c
mayonnaise
4 tsp
lemon juice
1 tsp
salt
1/4 tsp
pepper
3 c
cooked chicken, cubed
4
celery ribs, thinly sliced
1 c
fresh mushrooms, chopped (optional)
1/4 c
green pepper, chopped
1/4 c
red pepper, chopped
4
bacon strips, cooked and crumbled
1/2 c
chopped pecans, toasted

lettuce leaves

mini croissants, split

Directions Step-By-Step

In a small bowl, combine sour cream, mayo, lemon juice, salt, and pepper.

In a large bowl, combine chicken, celery, mushrooms, and peppers. Stir sour cream mixture into chicken mixture until combined. Cover and refrigerate for at least 4 hours.

Just before serving, stir in bacon and pecans. Spoon 1/4 cup chicken salad onto each lettuce-lined croissant.
