Low-fat, slow-cooked chicken romanoff

A rich, delicious dish that I made lower in fat, but it tastes just the same.

1/4 c
chopped onion.
20 oz
boneless, skinless chicken thighs, cut into 3/4"-pieces.
1/8 tsp
cayenne pepper.
12 oz container, low-fat cottage cheese.
1-1/2 c
light sour cream
1/2 c
reduced-fat grated parmesan cheese.
2 Tbsp
all-purpose flour
2 c
uncooked, no-yolk noodles.
1 c
frozen sweet peas, thawed.
2 Tbsp
chopped fresh chives.

Directions Step-By-Step

Spray a 4-quart slow-cooker w/ cooking spray. Mix onion, chicken and cayenne pepper in cooker. In lg bowl, mix cottage cheese, sour cream, parmesan cheese and flour. Pour over chicken. Cover, cook on low for 5 hrs. Stir mix. Stir in noodles and peas. Increase heat to high. Cover, cook 30 min, or until noodles are tender. Top w/ chopped chives.
