Ingredients

3/4 c
low sodium chicken broth
1 1/2 Tbsp
tomato paste
1/4 tsp
ground black pepper
2 Tbsp
fresh oregano (or 2 tsp. dried)
1/8 tsp
salt
1 clove
garlic, minced
4
boneless, skinless chicken breast halves
3 Tbsp
dried bread crumbs
2 tsp
olive oil
2 c
sliced fresh mushrooms

Step-By-Step

1In medium bowl, combine broth, tomato paste, pepper, oregano, salt and garlic. Mix well and set aside.

2Dredge chicken in bread crumbs, coating well. Heat oil in large skillet over medium high heat.

3Sauté chicken in oil for 2 minutes per side, or until lightly browned.

4Add reserved broth mixture and mushrooms to skillet and bring to boil. Cover, reduce heat to low and simmer for 20 minutes.

5Transfer chicken to serving platter. Spoon sauce over chicken and serve. Top with grated parmesan, if desired.
