Ingredients

4 lb
boneless skinless chicken thighs
3/4 c
salsa
1/4 c
natural peanut butter
2 Tbsp
lime juice
1 Tbsp
soy sauce
1 tsp
fresh grated ginger
1/4 c
peanuts, chopped
1/4 c
chopped fresh cilantro

Step-By-Step

1Season chicken with salt and pepper and put chicken in crockpot
2Combine the remaining ingredients except the peanuts and cilantro, pour over the chicken.
3Cook on LOW about 4-5 hours or until the chicken is no longer pink in the center and is tender
4Remove the chicken from the slow cooker with a slotted spoon
5Skim the fat from the sauce and thicken with corn starch, if desired. Taste for seasoning at this point and adjust if needed. (Adding more salt or pepper as desired)
6Pour the sauce over the chicken and sprinkle with peanuts and cilantro
