Trace's StoryI used to watch Justin's Cajun Cooking Show & have been cooking this recipe for many years, with many alterations & add on's thru the years. You can literally add or use any meat.... " I Garontee" as Justin would say....
evoo (extra virgin olive oil)
par boiled rice
grn. bell peppers diced
ylw. onion diced
grn onion, sliced
andouille sausage, sliced
white or dark meat chicken, diced
shelled & deviened shrimps
1 1/8 bunch
cayenne pepper, depending on your desired level of hot

1In large dutch oven pot, add EVOO on Medium Heat
2add Garlic, get hot
add all veggies, except Parsley
3add sausage & chicken, saute til almost done
4stir all til well mixed
Add Rice & cayenne pepper
mix well again
5Add all liquid
Bring to a Boil
after rapid boil for 5 mins.
Cover w/ tight fitting lid turn down to low simmer
for 45 mins.
7DO NOT LIFT LID
DO NOT PEEK

This recipe as many of mine can be made vegetarian by ingredient adaptions. Meatless or w/ use of veggie protien meat products & use Veggie Stock instead of chicken. Can also be made w/ tomato paste for a different version & the meats can be any you prefer. We've added mushrooms before also.... Enjoy
