This is my mothers recipe. She has diabeties and tries to have healthy recipes that are also tasty on hand at all times.
I liked this one a lot, so figured I'd share it.

Ingredients

1 lb
whole wheat ziti pasta.
12 oz
cooked, chopped chicken breasts
2 tsp
butter
1
chopped onion
1 Tbsp
dijon mustard
2 Tbsp
whole wheat flour
2 c
reduced-sodium chicken broth
1/4 c
lemon juice
1
10 oz pkg frozen peas & carrots, thawed
1/4 c
fresh, chopped parsley.
1/8 tsp
salt and pepper to taste.

Directions Step-By-Step

Cook pasta as direcetd, drain, keep warm. In lg skillet, warm butter over medium heat. Add onion. Cook until tender. Stir in mustard and flour. Gradually whisk in broth. Bring to a boil. Stir in lemon juice, peas and carrots, and parlsey. Toss pasta w/ chicken and sauce. heat hrough. season w/ salt & pepper.
