Grilled, skewered pineapple chicken strips
These make a delicious appetizer.

- 1 c
- pineapple juice
- 1/2 c
- packed light brown sugar
- 1/3 c
- lite soy sauce
- 2 lb
- chicken breast tenderloins, or chicken breasts cut into strips
1In saucepan over medium heat, mix juice, brown sugar and soy sauce. Remove from heat just before it boils.
2Place chicken in lg shallow bowl. Pour marinade over chicken, refrigerate 30 min.
3Spray grill grates w/ cooking spray. Heat grill to medium heat. Thread chicken strips onto skewers lengthwise. Grill chicken about 5 min per side. Watch closely so they don't burn, because they cook quick!
