pork & chicken traditional brats
2 tsp
all-purpose greek seasoning
juice & zest of 1 lemon
3 Tbsp
extra virgin olive oil
1/2 tsp
course black pepper
2 medium
white eggplant fingers, sliced 1 inch thick
2 medium
green eggplant fingers, sliced 1 inch thick
1/2 small
red onion, cut 1 inch
cherry tomatoes
kalamata olives, pitted
aged balsamic vinegar to drizzle
2 oz
herb goat cheese, crumbles
italian parsley, chopped for garnish

Directions Step-By-Step

Soak 6-8 bamboo skewers in water for 30 minutes. Toss all the veggies in a bowl with olive oil, Greek seasoning, lemon juice, zest and pepper. Assemble skewers: eggplant, tomatoes, sausage, onion & olives. Repeat until skewer is complete Grill on a medium high heat for 15 minutes or until juices run clear, so turning at least once. Remove from grill and drizzle aged balsamic and top with goat cheese and parsley
