I was thinking of something to do with the one chicken breast I had in the fridge and me and my hubby LOVE spice! This is the result! SOOOOOOO GOOD!

Ingredients

1 large
boneless, skinless chicken breast (raw)
kosher salt
ground black pepper
cayenne pepper
granulated garlic (powder)
1 medium
green pepper, seeded and finely diced
1 small
onion, finely diced
2 small
jalapenos, fresh-seeded and finely diced
1/4 c
fresh cilantro, finely chopped
1/4 tsp
chipotle chili powder (or to taste)
6 Tbsp
miracle whip light

Step-By-Step

1Pre-heat oven to 350 degrees F. Liberally season chicken breast with salt, pepper, garlic powder and cayenne pepper to taste. Wrap chicken breast in foil and bake for 30-40 minutes. Let chicken rest for 20 minutes before shredding or finely dicing.
2Add all diced peppers, onions and chopped cilantro to cooled, shredded or finely diced chicken. Mix together Miracle Whip Light and chipotle chile powder together and add to chicken/veggies and mix thoroughly.
3Serve on toasted bread, bagels, crackers or all by itself!
