This is a delicious recipe for serving chicken; however it is very spicy.

Not for the faint of heart.

Ingredients

3
boneless skinless chicken breast
1/4 c
olive oil
2 Tbsp
homemade curry powder (link in comment below)
1 c
water
1 can(s)
petite diced tomatoes (15 oz size)
1/8 c
lime juice
1 medium
white onion
2 c
cooked rice

Directions Step-By-Step

Cut chicken breasts into bite sized chunks and set aside

Mince onion and set aside

Heat oil in cast iron or heavy skillet to medium high heat

When oil is slightly smoking, add onions and cook until translucent (3-5 minutes)

In same pan with onions, add chicken and curry powder.

Cook, stirring frequently until all sides are golden brown

Add all other ingredients except rice and bring to boil

When mixture is boiling, turn heat to low and cover pan

Simmer for about 20 minutes until chicken is tender and sauce has thickened

On serving platter, place previously cooked rice and make a well.

Pour chicen curry mixture over rice and serve immediately
