I was really craving enchiladas one day and discovered I was almost out of anykind of shreddbale cheese! I substituted cream cheese and all anyone could say was WOW!

Ingredients For creamy enchilada casserole

  • 8 oz
    cream cheese cut into small pieces
  • 1 lb
    ground beef
  • 1 md
    onion, diced
  • 1 pkg
    tortillas, flour or corn
  • 2 can
    enchilada sauce red or green, i prefer old el paso
  • 1/2 c
    shredded cheese
  • 2 clove
    garlic
  • salt and pepper to taste

How To Make creamy enchilada casserole

  • 1
    cook diced onion, finely chopped garlic and ground beef until cooked through, using salt and pepper to taste. Add 1/4 of the can of enchilada sauce to meat stir until absorbed on low heat.

    Spray 8x8 pan with non stick cooking spray. spoon and spread a tablespoon or two of sauce into bottom of pan and spread evenly. place an even layer of tortillas. place half of meat mixture and then cubes (dallops of cream cheese randomly over meat mixture, pour 1/2 can of sauce over layer. Repeat layer. Top last layer with tortillas and remaining sauce and shredded cheese.

    Bake at 350 for 30 minutes or unitl heated through and cheese bubbles.
