Coconut Curry Chicken

Ingredients

1 lb
chicken breast halves, skinless and boneless cut into bite size pieces
1 can(s)
light coconut milk
1 Tbsp
fish sauce
1 Tbsp
red curry paste
4 tsp
cilantro, fresh, chopped
4
lime wedges

Step-By-Step

1Heat a large nonstick skillet over medium high heat. Coat pan with cooking spray. Add chicken and cook until done, stirring occasionally. Transfer chicken to plate.
2Add coconut milk, fish sauce, and red curry paste to pan, stirring with a whisk to loosen brown bits. Return chicken to pan. Bring to a simmer for 8 minutes, stirring occasionally.
3Serve over rice with cilantro and lime wedges.
