Yum! This is my kind of easy weeknight dinner recipe. The white wine adds some acidity to the recipe. The sun-dried tomatoes are a bit tart and a burst of flavor. It's an easy dinner to impress guests.

Ingredients

2 lb
boneless skinless chicken breast cut in bite size pieces
1 Tbsp
olive oil
2 c
chopped sun-dried tomatoes in olive oil
1 lb
button mushrooms
3 c
white wine (can substitute chicken broth)
2 clove
garlic
1 small
onion
1 Tbsp
oregano, dried
salt and pepper

Step-By-Step

1Heat the oil in a large fryer pan, add the onion and cook until translucent.

2Add garlic and chicken. Cook until brown.

3Add the wine and bring to a slight boil.

4Add the mushroom, sun-dried tomatoes, oregano, salt and pepper. Cook until the wine reduces to half.
