This is a meal for any season. Summertime, sides could be a crispy iceberg wedge, chopped salad or sliced tomatoes with basil....served with a nice white wine.

Winter, Spring and Fall, Asparagus, spinach salad, sauteed mushrooms, or roasted root veggies....

Ingredients

whole chicken

onions, yellow, medium and or mix of yellow and vadallia

sprigs of fresh thyme

bay leaves
smoked paprika

NOTE: This recipe calls for cutting up a whole chicken, you can purchase pre-cut whole chickens. However, if you want to save some pennies, buy a whole chicken and cut in pieces.....

Salt and pepper chicken, and brown pieces in EVOO in large quart dish. While browning the chicken, clean and slice onions (I do rings and half rings). Set aside. Remove browned chicken and drain oil from pan . Return browned chicken to the pan.

After chicken has been browned and onions sliced, place bouquet of thyme and bay leaves on top of chicken. Then take onions and place on top of browned chicken and herbs. Sprinkle with smoked paprika, cover dish and cook at 325 - 350 for 2 hours. The lower the oven the longer the time. Onions should be and look caramelized. This can be a set it and forget it meal. IT IS DELICIOUS and HEALTHY COMFORT FOOD....
