Chicken With Country Gravy

Place butter and oil in a medium ovenproof skillet. Place in a 425 F oven for 5 minutes.
Meanwhile, in a large resealable plastic bag, combine flour and seasoning.
Add the chicken, one piece at the time. Seal bag and toss to coat.
Carefully place chicken, skin side down, in hot skillet. Bake uncovered, for 15-20 minutes on each side or until a meat thermometer reads 180 F.
Remove and keep warm. Transfer 1 tablespoon of drippings from the skillet to a small saucepan; stir in flour until smooth.
Gradually stir in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened.
