Ingredients

4 qt chicken broth
1 medium onion chopped
2 clove garlic, minced
3 stalks celery, chopped
4 carrots, sliced
1 tsp thyme, dried
3 c cut up cooked chicken ...no bones or skin
1 pkg egg noodles
1/4 c chopped parsley
plenty of salt & pepper

This hearty, brothy soup serves
as the cure for many ills and ailments, and when you are under the weather!
Known as penicillin in some circles.
It is not fun to be down sick with the flu or whatever.
Family used to live close but came the super highways....and then we are lucky to see close relatives that now live hundreds, thousands of miles away.
Then the only caregiver for you is yourself.
So here is a loving recipe from a MOM for a child that is in need of some loving care, in the form of soup! and with loving prayers for you and yours. Hugs,a Mom

 

Directions

1
Bring the broth to a boil in a large pot.
Add onion,garlic,celery, carrots and herbs.
Reduce to a simmer, cover and cook 10-15 minutes.
Return soup to a boil and add noodles and parsley.
Reduce to a simmer, cover and cook till noodles are cooked.
Add salt and pepper to taste.
Makes enough to feed all the sick at home.

Nancy. I could not agree more-"Chicken Noodle Soup" is truly the first step to recovery.

I find myself bound to honor any 'Mom' who posts her photo as a silent member of "The Red Hat Ladies". I have several friends who are members of different 'Red Hat' groups. These ladies meet for diverse reasons, yet acts of kindness are the ultimate results of their meetings.

AWWWW How sweet!! Sure does look yummy! Gettin' tired of Campbell's and like you said....way toooo salty. The good thing with making your own soup, you can control the salt content among other things. I took some chicken out of my freezer two days ago, now I know what I will make with it. Was going to make chicken and dumplins but right now I NEED this soup much more...and so does my hubby. Thanks, ma. You are such a kind and thoughtful lady! 3/16/12

I have some garlic in the house; but I don't know if it's any good. I've had it for quite awhile...I have to go to the store today anyway so I'll pick up another garlic and the egg noodles and I'll be good to go... I love garlic and I'm sure that is one of the main ingredients...LOL 3/16/12

Hey Mom, I mean Nancy....have not heard from you today! You okay? Thought I'd let you know I'm making this for our dinner tonight. Cooked that chicken that I got out of the freezer a few days ago. Added some left-over chicken broth that I had in the freezer and 1 qt of chicken stock (almost the same thing as broth). After adding the water and all of this, I have about 3-4 qts of chicken broth. I cut up the carrots, celery, garlic and onion and added that. My house smells wonderful. A whole lot better than when I make Campbell's chicken noodle soup. LOL. I didn't have Thyme in the 'fresh' form so I just sprinkled a little ground Thyme in the pot. Picked the chicken off the bones and added that. (Your directions don't say when to add the chicken; but I don't think it matters a whole lot, Right?). It is simmering with the timer set for 15 minutes, then I'll add the parsely and the noodles and cook til the noodles are done. Sounds and smells great! 3/17/12 Happy St Patrick's Day!! Sure do hope this helps my cold. It seems to be hanging on.

I might like to add the cooked (in a separate pot)noodles
when you are almost ready to eat your soup,
just to re warm them in the soup...
That way they do not get mushy,,, or soak up your broth!

Mmmmmm Mmmmmmm Great, Mmmmmm Mmmmmm Great! That's what Nancy's soup is....Mmmmmm Mmmmmm Great!! I took two pictures of the soup in the pot and two in the bowls. I'm going to try to get them applied to your recipe here. Hope I don't mess anything up. If I actually do get them on here and you don't like them Nancy, you can delete them. 3/17/12 Hugs, Rose
