Chicken & Craisin Salad Sandwich

3 chicken tenders; cooked, cooled & diced
1/3-1/2 c craisins
1/2 celery stalk, finely diced
1/4 c dijon mustard (more or less to your liking)
1/3 c mayonnaise, light (more or less to your liking)
salt and pepper, to taste
bread of your choice (i used pita)
garnish of your choice, if wanted

Place on the bread of your choice and garnish, if desired.

I have made this before because down here on Cape Cod they call it "Cape Cod chicken sandwich" because of the cranberries, but guess what else they add that makes it soo good? Chopped finely walnuts!!!! I know sounds crazy but believe me it is so good, I love it !!!!

Michelle, this is one of those recipes...that you can add or subtract ingredients and it's still yummy....
Carol, I too add dried cranberries and sometimes toasted walnuts!
I think that is why I cook with so much chicken, its so versatile....
