I have tweaked this recipe because of the cooking times for the chicken. This is definitely a German-style meal.

Ingredients

1/4 tsp
allspice, ground
1 tsp
salt
1/2 tsp
pepper
4 small
chicken breasts, boneless and skinless
2
shallots
3 c
red cabbage, shredded
1/2 c
chicken stock
2 Tbsp
vinegar
1 tsp
brown sugar
1 tsp
caraway seeds
1 Tbsp
olive oil
chopped chives for garnish (optional)

Step-By-Step

1In a small bowl, combine the caraway seeds, allspice, salt and pepper. Use this blend to season the chicken.
2In a skillet that has been sprayed with cooking oil, cook the chicken over medium heat for about 10 minutes on each side; set aside.
3For the sauce, use the same skillet and add olive oil to the hot pan. Saute shallots for 2 minutes. Then add the shredded cabbage, chicken stock, vinegar, and brown sugar.
4Turn the heat to medium-high and cook, stirring, until the cabbage is coated with glaze.
5Return the cooked chicken to the skillet and cook for about 10 minutes more (or until no longer pink inside). Garnish with choppedf chives.
