Chicken Broccoli Soup

I felt like playing in the kitchen , so I put this together to use up a rotisserie chicken.

Ingredients

1
rotisserie chicken carcass w/ about
1 1/2 c
cooked chicken left on
1 1/2 c
broccoli flowerettes ( i also peel and slice the stems and add)
1 1/2 c
baby carrots
1 1/2 c
sliced mushrooms
chicken broth to cover
1/4 tsp
each: basil, thyme, marjoram, rosemary, garlic powder and parsley.
1 tsp
dried, chopped onion

Step-By-Step

1Place chicken carcass in saucepan; add water to cover.
2Simmer, covered about 1/2 hour.
3Cool and drain, saving cooking liquid. Pick meat from bones and return meat and liquid to pan.
4Add Broccoli, carrots, mushrooms, chicken broth and herbs and seasonings.
5Cover and simmer about 20 minutes until vegetables are tender.
6Adjust herbs to taste.
