Baked Chicken Parmesan by Susan

I've been making this since the first week I was married. Back then I actually made my own pasta sauce. Now I usually get a jar. But it's good either way.

6 large
chicken breast halves, skinless and boneless
1 c
finely grated parmesan cheese, divided (the kind in the green can)
1 Tbsp
crushed italian herbs
1 large
jar of your favorite pasta sauce (or 3 1/2 cups of your own homemade)
1 1/2 c
shredded mozzarella cheese

Directions Step-By-Step

Wash and dry the chicken breast halves. Preheat oven to 350°. Grease a shallow baking dish that will just hold the chicken, placed close together. Place 3/4 cup of the parmesan cheese in a shallow plate and stir in the Italian herbs.
Press the chicken breast halves one at a time into the parmesan cheese coating, on both sides, getting a fine layer of cheese to stick. Place chicken breasts in the baking dish. Sprinkle any leftover coating on top of chicken breasts.
Pour the pasta sauce evenly over the chicken breasts. Then, sprinkle the remaining 1/4 cup of parmesan cheese evenly over top of chicken breasts. Finally, top with the shredded mozzarella.
Bake for 35-40 minutes, until juices run clear.

Serve with pasta of your choice and a nice green salad. Italian bread is good, too. I recommend my Susan's Herbed Italian Bread.
