Heat oven to 375. Lightly spray a baking sheet w/ cooking spray. In covered pot, over low heat, cook dried apricots, orange juice, ginger, garlic and shallots for about 20 mins, or until apricots are tender. Add vinegar, cook 30 seconds. Using a fork, mash the mix until smooth.
Place chicken on baking sheet. Season w/ salt and pepper. Lightly coat chicken w/ cooking spray. Spread apricot mix over each chicken breast. Bake 15 mins, or until chicken is no longer pink inside.
