This is a great healthy recipe with only 305 cal. Great served over rice. The white or brown Jazmine rice goes wonderful with this!

Ingredients

2 Tbsp
pure wesson canola oil
4
boneless skinless chicken breast
1 tsp
dried italian seasoning
1 1/3 c
reduced-sodium chicken broth
1/2 c
apricot preserves
1 Tbsp
cornstarch

Step-By-Step

1Heat oil in large skillet over medium-high heat. Sprinkle chicken with Italian seasoning. Add to skillet and cook 12 to 15 minutes or untill no longer pink in centers, turning once.

2Stir together all remaining ingredients in a small bowl untill well blended. Gradully add to chicken in skillet. Cook 3 to 4 minutes or untill sauce is thickened, stir constantly.

3If adding rice, prepare as told on bag.
