cheesy frito taco bake

WARNING! This bake is a calorie, fat gram, and sodium overload; if you love Mexican and are ready to break the bank, this is a great way to go! Not a throwback Frito casserole, this dish mixes ground beef, taco seasoning, leftover rice, green chilies, salsa, refried beans, and CHEESE!. Trust me, this WORKS. Top while hot w/ tomatoes, lettuce, avocado, and/or sour cream. All are optional.

How To Make cheesy frito taco bake

1If you do not have leftover rice, make 2 cups of cooked rice. Cooks choice on rice color.
-
2Preheat oven to 350 degrees. Grease a 13X9 inch baking dish and set aside for later use.
-
3In a 14 or 16 inch skillet over medium heat, brown beef until cooked through and no longer pick.
-
4Remove meat and set aside. Drain fat, reserving 1 tablespoon in skillet.
-
5Add chopped onion to skillet and saute until softened and translucent, about 6-8 minutes.
-
6Season with pepper and onion powder. Add taco seasoning.
-
7Return beef to skillet and then add salsa, chilies, and water. Mix to combine.
-
8Bring mixture to a boil, then reduce heat to low, cover and simmer for 5 minutes.
-
9Remove from heat and stir in rice, 2 cups of cheese, and refried beans. Mix well and then transfer to prepared baking dish.
-
10Top with Fritos and sprinkle remaining cheese over Fritos. Sprinkle black olives over cheese.
-
11Bake in preheated oven until cheese is melted and dish is bubbly and heated through. About 30-35 minutes. Top with chopped tomato or green onions, optional. See other options in About Recipe section.
-
12Remove from oven and top with more Fritos or other toppings as desired. Serve hot and savor that cheesy taco goodness!
